Vegetable Biryani!

There is nothing better than a plate of aromatic Vegetable Biryani.

Vegetable Biryani is long Basmati rice loaded with veggies, nuts and warm spices.

Ingredients:

  • Oil
  • Ghee
  • Fresh cream
  • Curd
  • Salt
  • Basmati Rice
  • Vegetables- carrots, green peas, onions, cauliflower, french beans,  potatoes, tomatoes
  • Cottage cheese
  • Spices- bayleaf, cinnamon, clove and cardamom
  • Cumin seeds
  • Saffron
  • Meeshna Vegetable Biryani Masala
  • Meeshna Turmeric Powder
  • Meeshna Chilli Powder
  • Meeshna Garam Masala

 

Recipe:

All you need to Prepare:

  • Prepare cooked rice by combining it with water and above mentioned spices- bayleaf, cinnamon, clove and cardamom
  • Strain the rice after 10 minutes of cooking the same
  • Dice and boil vegetables- carrots, green peas, cauliflower, potatoes and french beans
  • Finely chop onions and tomatoes
  • Fry sliced onions until they turn brown
  • Prepare a mixture of curd and saffron

 

Steps to make Vegetable Biryani:

  1. Take a large pan with oil and add cumin seeds
  2. Add onions and let it cook until they turn translucent
  3. Add tomatoes
  4. Add all the masalas- Salt, Meeshna Vegetable Biryani Masala, Meeshna Turmeric Powder, Meeshna Chilli Powder and Meeshna Garam Masala
  5. Add the boiled veggies and cottage cheese
  6. Add cream to give it a creamy texture
  7. Let this mixture (gravy) cook for 5 minutes
  8. Meanwhile, combine the cooked rice with the mixture of curd and saffron
  9. Start making layers- spread rice evenly in a handi as the bottom layer. The next layer is of the vegetable gravy, which is topped with some rice again. Pour ghee evenly over the rice. Garnish with some sliced onions. Cover the lid of the handi.
  10. Keep the handi on a low flame for atleast 30 minutes
